Today is a very special day for my readers! I am going to share one of my greatest recipes with you.

I don’t mean to brag…but for those of you who don’t know me I am known for some pretty knock out dishes! This is my own version of Beef Rouladen! Basically meaning rolled beef tenderloin…and its delicious!
Alright…are you ready for this?? Lets get started!
The first step is to get some high quality grass fed beef tenderloin from K Creek Ranch! Start by making small slices along the edge and unrolling the tenderloin as you slice, until it becomes a flat sheet of meat.

Next mix together a batch of olive tapenade which is basically olives, garlic and spices all chopped fine. Any recipe will work for Beef Rouladen so pick your favorite! Spread the tapenade over the beef sheet and cover that layer with fresh spinach.

You can also put a layer of prosciutto ham. Or my favorite, summer sausage!

Roll the tenderloin like you would caramel rolls. Once you get it rolled you’ll cut it into 1-1 1/2 inch steaks.

Now at this point you’ll want to stick the tooth pick through the steaks to hold it together. ( for a delicious variation wrap the steak in a slice of K Creek ranch bacon. Caution! If you are using store bought bacon eliminate this step!)
Place into a baking dish and bake at 350 degrees for about 15 minutes. (based on how you like your steaks this time will vary.)
