Mixing my ranching skills and culinary tricks together makes for a fun job! I recently had the pleasure of preparing my first ever K Creek Ranch Wine dinner! The five course menu included both pork and beef off our ranch, I’ll tantalize your taste buds by giving you a preview of what the menu looked like!
Appetizer: Seared Steak Kabobs
For this course I used ribeye steak cut into 1 inch cubes marinated in a garlic balsamic marinade. Skewered with green bell peppers and a grape tomato all sprinkled with Italian seasoning and K Creek Ranch bacon grease before searing it off of the grill. Once they were had grill marks I removed them from the heat to let them rest then finished them in the oven with some beef broth. Served on a bed of caramelized onions this course was an instant hit!
Salad: Caprese Salad with a Bacon Balsamic
This course was probably the hit of the night, but what do you expect when you use the best bacon in the world to top off this healthy salad! Using organic spring mix, roma tomatoes, and Organic Valley mozzarella, I topped it off with an Italian balsamic vinaigrette and chopped bacon! Delicious!
Soup: Pork Cassoulet
What made this soup unique is that I used both pork steak and summer sausage to give it a bit of a smoky flavor. Typically Cassoulets have beans in the recipe but I chose to leave them out to make it more like a loaded tomato soup instead of a chilli.
Entrée: Pulled Beef Fajitas
Tender juicy beef roast mixed with al dente bell peppers and onion and tossed with fire roasted tomato sauce made the perfect filling for our sprouted grain tortillas. All of that topped with a Mexican seasoned sour cream made the guests fall in love with our grass fed beef!
Dessert: Raw Pumpkin Cheesecake Trifle
Of course dessert is always an instant hit, the part that made this dessert fun was being able to surprise the guest by telling them that it was healthy. The crust was a walnut and coconut base, the second layer was made pureeing dates, pumpkin, coconut milk, and spices. For the cream cheese topping its as simple as creaming pure maple syrup, pumpkin pie spices, and coconut milk together. There is a lot of beauty in guilt free desserts!
The whole night was a huge hit and a ton of fun! As a chef it’s such a pleasure to showcase our products in such an elegant setting!
