With a custom cut, you work directly with the locker to decide how your beef is cut and packaged. You choose:
Steak thickness & how many per pack
Roast size (e.g., 2–3 lb, etc.)
Ground beef package size (1 lb, 3 lb, or a combo)
Which cuts you want made into ground beef
Packaging (paper wrap or vacuum seal)
Vacuum Seal Note: Vacuum seal adds $0.30 per package and keeps beef fresh longer. However, treat vacuum-sealed packages with care — tossing them into the freezer or pulling on the labeled edge can break the seal and allow air in.
Inspection Options:
Custom cut beef can be ordered with or without USDA inspection.
If you choose USDA inspected, it will carry the K Creek Ranch retail label and can be legally sold by the package (to individuals, retail outlets, or restaurants).
If you decline USDA inspection, packages will be marked “NOT FOR SALE”. This does not mean it’s unsafe — it is still state inspected — it simply cannot be resold.
Custom cuts are ideal for customers who want maximum say in how their beef is processed and packaged for their family.
Pre-cut beef is already cut to our standard cutting list, vacuum sealed, freezer-ready, and available for pickup when inventory is in stock.
