With a custom cut, you work directly with the locker to decide how your beef is cut and packaged. You choose:
Vacuum Seal Note: Vacuum seal adds $0.30 per package and keeps beef fresh longer. However, treat vacuum-sealed packages with care — tossing them into the freezer or pulling on the edge can break the seal and allow air in.

As a business, we choose to have our beef USDA inspected because it allows us to legally sell beef to restaurants, stores, and customers by the individual package.
USDA inspection also gives us flexibility if a customer places an order but later decides not to purchase the beef (especially if no deposit has been made). In that case, we can still offer those cuts for sale by the package.
Without USDA inspection, the beef must carry a “Not For Resale” label, which means we legally cannot sell those cuts to anyone else if an order is canceled. We would have to keep the beef for our own use. It does not mean that the beef is bad in any way.
USDA inspection helps us provide more options, serve more customers, and ensure every cut of beef can be properly handled and sold.
Pre-cut beef is already cut to our standard cutting list, vacuum sealed, freezer-ready, and available for pickup when inventory is in stock.
